Ingredients

  • 1 cup cottage cheese

  • 1/2 cup shredded cheese (optional, can use cheddar or mozzarella)

  • 1 tablespoon olive oil (or butter)

  • 1/2 teaspoon garlic powder

  • Salt and pepper, to taste

  • Fresh herbs like chives or parsley for garnish (optional)


Instructions

  • Preheat your oven to 375°F (190°C).

  • Grease a baking dish or individual ramekins with olive oil or butter.

  • Crack the eggs into the dish, being careful not to break the yolks.

  • Add spoonfuls of cottage cheese around the eggs.

  • Sprinkle garlic powder, salt, and pepper over the eggs and cottage cheese.

  • Add shredded cheese if desired.

  • Bake in the preheated oven for about 12-15 minutes or until the eggs are set to your liking.

 

  • Garnish with fresh herbs and serve warm.
