Ingredients
-
2 medium zucchinis, sliced into 1/4 inch rounds or lengthwise
-
2 tablespoons olive oil
-
1 teaspoon garlic powder
-
1 teaspoon dried oregano
-
Salt and pepper, to taste
-
1 tablespoon lemon juice (optional, for extra flavor)
-
Fresh parsley or basil for garnish (optional)
Instructions
-
Preheat the grill to medium-high heat.
-
Wash and dry the zucchinis, then slice them into 1/4-inch rounds or lengthwise strips, depending on your preference.
-
In a bowl, toss the zucchini slices with olive oil, garlic powder, oregano, salt, and pepper.
-
Place the zucchini slices on the preheated grill. Grill for about 3-4 minutes per side, or until grill marks appear and the zucchini is tender but still has a slight crunch.
-
Remove from the grill and drizzle with lemon juice, if using. Garnish with fresh parsley or basil.
-
Serve immediately as a side dish or incorporate into a salad.
Notes
You can add different seasonings to suit your taste, such as Italian seasoning or smoked paprika.
For extra flavor, try marinating the zucchini for 10-15 minutes before grilling.
You can also use a grill basket if the slices are too small to grill directly on the grate.
