- 1 cup all-purpose flour
- 1 tablespoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon black pepper
- ½ teaspoon cayenne pepper (optional)
- 1 cup buttermilk
- ½ cup shredded cheddar cheese
- ½ cup shredded Monterey Jack cheese
- ¼ cup sliced jalapeños
- ¼ cup chopped green onions
- ¼ cup crumbled bacon
- Vegetable oil for frying
Instructions
- Peel (optional) and cut the russet potatoes into fries. Rinse the fries in cold water to remove excess starch and pat them dry with paper towels.
- In a medium bowl, combine the flour, Cajun seasoning, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper (if using).
- Dip each potato fry into the buttermilk, then coat with the seasoned flour mixture, making sure to shake off any excess flour.
- Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the coated fries in batches for about 4-5 minutes, or until golden brown and crispy. Remove the fries from the oil and drain on paper towels.
- While the fries are still hot, sprinkle the shredded cheddar cheese and Monterey Jack cheese over the fries. Place them under a broiler for 2-3 minutes, or until the cheese is melted and bubbly.
- Once the cheese is melted, top the fries with sliced jalapeños, chopped green onions, and crumbled bacon.
- Serve immediately and enjoy with your favorite dipping sauce!
