Description

These Roasted Fingerling Potatoes are crispy on the outside, tender on the inside, and full of flavor! Tossed in olive oil and seasoned with garlic powder, paprika, and a pinch of salt, they make the perfect side dish for any meal. Garnished with fresh parsley, they’re as beautiful as they are delicious.


Ingredients

  • 1 lb fingerling potatoes
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash and dry the fingerling potatoes. Slice them in half lengthwise if they are large, or leave them whole if they are smaller.
  • In a large bowl, toss the potatoes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  • Spread the potatoes in a single layer on a baking sheet.
  • Roast in the oven for 25-30 minutes, or until the potatoes are golden brown and crispy on the outside, and tender when pierced with a fork.
  • Remove from the oven and garnish with freshly chopped parsley before serving.

Notes

  • You can substitute the paprika with smoked paprika for a slightly different flavor.
  • For an extra crispy finish, broil the potatoes for the last 2-3 minutes of roasting.
  • Feel free to add other seasonings like thyme, rosemary, or Parmesan cheese for additional flavor.
