  • 3 lb beef roast
  • 1 cup dried cranberries
  • 1/2 cup balsamic vinegar
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  • Preheat oven to 350°F (175°C).
  • Season the beef roast with salt and pepper.
  • In a small bowl, mix together cranberries, balsamic vinegar, soy sauce, honey, and minced garlic.
  • Place the beef roast in a roasting pan. Pour the cranberry balsamic mixture over the roast, making sure it’s evenly covered.
  • Roast the beef in the preheated oven for 1.5 to 2 hours, or until the roast reaches your desired level of doneness (internal temperature of 135°F for medium-rare, 145°F for medium).
  • Baste the roast with the sauce every 30 minutes to keep it moist and flavorful.
  • Once the roast is done, remove it from the oven and let it rest for 10-15 minutes before slicing.
  • Serve the roast sliced with the cranberry balsamic sauce spooned over the top.

  • Adjust the sweetness by adding more or less honey depending on your taste.
  • For an extra touch, sprinkle fresh herbs like rosemary or thyme on top before roasting.
