Instructions
- Preheat oven to 350°F (175°C).
- Season the beef roast with salt and pepper.
- In a small bowl, mix together cranberries, balsamic vinegar, soy sauce, honey, and minced garlic.
- Place the beef roast in a roasting pan. Pour the cranberry balsamic mixture over the roast, making sure it’s evenly covered.
- Roast the beef in the preheated oven for 1.5 to 2 hours, or until the roast reaches your desired level of doneness (internal temperature of 135°F for medium-rare, 145°F for medium).
- Baste the roast with the sauce every 30 minutes to keep it moist and flavorful.
- Once the roast is done, remove it from the oven and let it rest for 10-15 minutes before slicing.
- Serve the roast sliced with the cranberry balsamic sauce spooned over the top.
