Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup orzo
  • 2 cups chicken broth
  • 1 can diced tomatoes
  • 1/2 cup crumbled feta cheese
  • Fresh chopped parsley for garnish

Instructions

  • In a mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, oregano, garlic powder, salt, and pepper. Mix until well combined.
  • Shape mixture into meatballs.
  • In a skillet, brown meatballs on all sides. Remove from skillet and set aside.
  • In the same skillet, add orzo, chicken broth, and diced tomatoes. Bring to a simmer.
  • Add meatballs back to the skillet. Cover and cook until orzo is tender and meatballs are fully cooked through, about 10-15 minutes.
  • Top with crumbled feta cheese and fresh chopped parsley before serving.

Notes

  • For extra flavor, drizzle some olive oil over the meatballs while cooking.
  • You can substitute ground lamb for the beef to create a more traditional Greek flavor.
  • If you prefer a thicker sauce, reduce the amount of chicken broth slightly.
