- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 egg
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 cup orzo
- 2 cups chicken broth
- 1 can diced tomatoes
- 1/2 cup crumbled feta cheese
- Fresh chopped parsley for garnish
Instructions
- In a mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, oregano, garlic powder, salt, and pepper. Mix until well combined.
- Shape mixture into meatballs.
- In a skillet, brown meatballs on all sides. Remove from skillet and set aside.
- In the same skillet, add orzo, chicken broth, and diced tomatoes. Bring to a simmer.
- Add meatballs back to the skillet. Cover and cook until orzo is tender and meatballs are fully cooked through, about 10-15 minutes.
- Top with crumbled feta cheese and fresh chopped parsley before serving.
Notes
- For extra flavor, drizzle some olive oil over the meatballs while cooking.
- You can substitute ground lamb for the beef to create a more traditional Greek flavor.
- If you prefer a thicker sauce, reduce the amount of chicken broth slightly.
