- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/2 cup red onion, finely chopped
- 1/2 cup cucumber, diced
- 1/2 cup bell pepper, diced
- 1/4 cup fresh basil, chopped
- 1/4 cup Italian dressing
- Salt and pepper to taste
- Grated Parmesan cheese for garnish
Instructions
- Cook the Tortellini:
Cook the tortellini according to the package instructions. Drain and rinse with cold water to cool. - Prepare the Vegetables:
In a large bowl, combine the cooked tortellini with cherry tomatoes, black olives, red onion, cucumber, bell pepper, and basil. - Dress the Salad:
Drizzle Italian dressing over the salad and toss to combine. - Season:
