- Prepare the Chicken: Preheat the oven to 375°F (190°C). Pat the chicken breasts dry with paper towels. Use a sharp knife to carefully cut a pocket into the side of each chicken breast (be careful not to cut all the way through). Season both sides of the chicken with salt and pepper.
- Make the Spinach Filling: In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Add the chopped spinach and cook until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.
- Stuff the Chicken: In a bowl, mix together the cooked spinach, cream cheese, Parmesan, and mozzarella until well combined. Stuff the mixture into the pockets of each chicken breast, dividing it evenly. You can secure the opening with toothpicks if necessary.
- Cook the Chicken: Heat a large oven-safe skillet over medium-high heat. Add the stuffed chicken breasts and sear for 2-3 minutes per side, until golden brown. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Serve: Remove the toothpicks (if used) and serve the chicken with your favorite side dishes. Garnish with fresh basil or parsley if desired.
