  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)

  • 4 slices of your choice of bread (sourdough, whole wheat, or sandwich bread)
  • 4 slices of cheese (Swiss, mozzarella, or cheddar are great options)
  • 1 tablespoon butter (for toasting the bread)
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  • Sauté the mushrooms and onions:
    Heat olive oil (or butter) in a large skillet over medium heat. Add the sliced onions and sauté for about 3-4 minutes until softened. Add the sliced mushrooms and garlic to the skillet, and cook for about 6-8 minutes, stirring occasionally, until the mushrooms release their moisture and become tender.
  • Add the seasonings:
    Stir in the soy sauce, Worcestershire sauce (if using), thyme, salt, and pepper. Cook for another 2-3 minutes until the mixture is well combined, and the flavors meld together. Remove the skillet from the heat.
  • Toast the bread:
    While the mushrooms cook, butter one side of each bread slice. Heat a separate skillet over medium heat, and place the bread slices butter-side-down in the pan. Toast until golden brown and crispy, about 2-3 minutes per side. Alternatively, you can toast the bread in a toaster and then butter it.
  • Assemble the sandwich melts:
    Once the bread is toasted, place a generous portion of the mushroom mixture onto each slice of bread. Top with a slice of cheese.
  • Melt the cheese:
    Heat a large skillet over medium heat and place the assembled sandwiches into the skillet, cheese-side-up. Cover the pan with a lid or foil to help melt the cheese. Cook for 2-3 minutes until the cheese has melted and is gooey.
  • Serve:
    Once the cheese is melted, remove the sandwiches from the skillet. Garnish with freshly chopped parsley if desired. Slice and serve warm!
