Ingredients
Scale
For the peanut butter filling:
- 1/2 cup (125g) creamy peanut butter
- 1/4 cup (30g) powdered sugar
- 1/4 cup (60g) unsalted butter, softened
- 1 tsp vanilla extract
For the chocolate coating:
- 8 oz (225g) milk or dark chocolate, chopped
- 2 tbsp vegetable oil (for smooth coating)
For the fortune cookies:
- 12–15 pre-made fortune cookies (store-bought or homemade)
Instructions
- Prepare the peanut butter filling:
In a medium-sized bowl, beat together the creamy peanut butter, powdered sugar, softened butter, and vanilla extract until smooth and well combined. The mixture should be thick but spreadable. - Fill the fortune cookies:
Carefully open each fortune cookie and use a small spoon to add a dollop of the peanut butter mixture inside. Gently press the cookie back together, making sure the filling stays inside. Repeat for all fortune cookies. - Melt the chocolate:
In a microwave-safe bowl or using a double boiler, melt the chocolate along with the vegetable oil. Stir until the chocolate is completely smooth and glossy. - Dip the cookies in chocolate:
Dip each filled fortune cookie halfway into the melted chocolate, allowing any excess chocolate to drip off. You can also use a spoon to drizzle the chocolate over the cookies if you prefer. Place the dipped cookies on a parchment-lined baking sheet. - Let the chocolate set:
Once all the cookies are dipped, refrigerate them for at least 30 minutes or until the chocolate coating is completely set. - Serve and enjoy:
Once the chocolate has hardened, the Chocolate-Peanut Butter Covered Fortune Cookies are ready to serve! Enjoy them with friends or gift them in a cute box for a special treat.
Notes
- You can use dark or milk chocolate, depending on your preference.
- For a fun twist, consider adding crushed peanuts or sprinkles on top of the chocolate coating before it hardens.
- These cookies are best stored in an airtight container in the refrigerator for up to 1 week.
