Ingredients

Scale

For the cookies:

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

For the cheesecake filling:

  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract

For the cinnamon sugar coating:

  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  • Make the cheesecake filling: In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Set aside.
  • Prepare the cookie dough: In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, and beat until combined.
  • Combine the dough: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The dough should be thick and slightly sticky.
  • Shape the cookies: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. Take a small amount of cookie dough (about 1 tablespoon) and flatten it slightly in the palm of your hand. Place a small spoonful (about 1 teaspoon) of the cheesecake filling in the center of the dough, then wrap the dough around the filling to seal it inside. Roll the dough into a ball.
  • Roll in cinnamon sugar: In a small bowl, combine the granulated sugar and cinnamon for the coating. Roll each dough ball in the cinnamon sugar mixture, ensuring it’s evenly coated.
  • Bake the cookies: Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the cookies are golden around the edges but still soft in the center. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • Serve: Enjoy these delicious, cinnamon-kissed cheesecake donut cookies as a perfect treat with coffee, tea, or just as a sweet snack!

Notes

  • If you want an extra creamy filling, you can add a bit more powdered sugar to the cheesecake mixture for sweetness.
  • You can refrigerate the cookie dough for 30 minutes before shaping the cookies for easier handling.
  • These cookies can be stored in an airtight container at room temperature for up to 3 days or refrigerated for longer freshness.
