These soft and chewy coconut butter cookies are sweetened with coconut sugar and packed with shredded coconut for a rich tropical flavor in every bite.


Ingredients

  • 1 cup coconut butter
  • 1/2 cup coconut sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup shredded coconut

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, cream together the coconut butter and coconut sugar.
  • Beat in the egg and vanilla extract until well combined.
  • Stir in the salt and shredded coconut.
  • Scoop out dough onto the prepared baking sheet and flatten with a fork.
  • Bake for 10-12 minutes, or until the edges are golden brown.
  • Allow to cool before serving.
