- Lollipop sticks
- Candy thermometer
- Non-stick spray or oil (for greasing the molds)
Instructions
- Prepare the Lollipop Molds:
- Lightly spray your lollipop molds with non-stick spray or lightly grease them with oil. If you’re using lollipop sticks, insert them into the molds. Set aside.
- Make the Lollipop Mixture:
- In a medium saucepan, combine the Kool-Aid drink mix, sugar, corn syrup, and water. Stir everything together to dissolve the sugar, then place the saucepan over medium heat.
- Boil the Mixture:
- Allow the mixture to boil without stirring. Use a candy thermometer to monitor the temperature, and let it reach 300°F (150°C), also known as the hard crack stage. This can take about 10-15 minutes, so keep an eye on the mixture as it boils.
- Add the Fizz Ingredients:
- Once the syrup has reached the correct temperature, remove the saucepan from the heat. Quickly stir in the baking soda and citric acid. Be careful—it will bubble up and fizz!
- Pour the Lollipops:
- Immediately pour the hot syrup into the prepared molds. Fill each mold to the top, and be sure to cover the stick with some syrup for proper adhesion.
- Let the Lollipops Cool:
- Allow the lollipops to cool completely at room temperature. This should take about 30 minutes. Once fully set, remove them carefully from the molds.
