Instructions
- In a mixing bowl, cream together butter and powdered sugar until light and fluffy.
- Stir in vanilla extract.
- Gradually add flour, chopped pecans, and salt. Mix until well combined.
- Shape dough into small balls and place on a baking sheet.
- Flatten each ball slightly and use a toothpick to create the hedgehog’s spikes.
- Place mini chocolate chips for eyes and a whole pecan for the nose on each cookie.
- Bake at 350°F for 12-15 minutes or until lightly golden brown.
- Allow to cool before serving.
