Instructions

1. Preparing the Cookie Dough Base

  • Cream together the butter and sugars until light and fluffy.
  • Add eggs one at a time, followed by vanilla extract.
  • In a separate bowl, whisk together flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  • Fold in chocolate chips.

2. Making the Cheesecake Filling

  • Beat the softened cream cheese with sugar and vanilla extract until smooth.

3. Assembling the Cookies

  • Scoop the cookie dough and flatten into a disc.
  • Add a dollop of cheesecake filling to the center.
  • Top with another scoop of cookie dough and seal the edges.
  • Place on a parchment-lined baking sheet.

4. Baking the Cookies

  • Preheat the oven to 350°F (175°C).
  • Bake for 12–15 minutes, or until the edges are golden brown.
  • Cool on the baking sheet, then transfer to a cooling rack.
