Instructions
1. Preparing the Cookie Dough Base
- Cream together the butter and sugars until light and fluffy.
- Add eggs one at a time, followed by vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined.
- Fold in chocolate chips.
2. Making the Cheesecake Filling
- Beat the softened cream cheese with sugar and vanilla extract until smooth.
3. Assembling the Cookies
- Scoop the cookie dough and flatten into a disc.
- Add a dollop of cheesecake filling to the center.
- Top with another scoop of cookie dough and seal the edges.
- Place on a parchment-lined baking sheet.
4. Baking the Cookies
- Preheat the oven to 350°F (175°C).
- Bake for 12–15 minutes, or until the edges are golden brown.
- Cool on the baking sheet, then transfer to a cooling rack.
