Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, beat the softened butter and sugar until light and fluffy.
- Add the egg, lemon juice, lemon zest, and vanilla extract, and continue to beat until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined. If using, add the yellow food coloring and mix until evenly distributed.
- Roll the dough into 1-inch balls, then roll each ball in the sugar and powdered sugar mixture to coat.
- Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
