Instructions
- In a microwave-safe bowl, combine the sugar and corn syrup.
- Microwave on high for 5 minutes.
- Stir in the peanuts and microwave for an additional 3 1/2 minutes.
- Stir in the butter and vanilla extract, then microwave for another 1 1/2 minutes.
- Add the baking soda and stir quickly until the mixture becomes light and foamy.
- Pour the mixture onto a greased baking sheet and spread it out evenly. Let it cool completely.
- Once cooled, break the brittle into pieces and enjoy!
