Description

This Microwave Peanut Brittle is a quick and easy homemade candy that’s perfect for gifting or snacking. With just a few ingredients and a microwave, you can make a sweet and crunchy treat that rivals the classic stovetop version. Deliciously nutty, buttery, and perfectly brittle!

Ingredients

Scale
  • 1 cup white sugar
  • 1/2 cup light corn syrup
  • 1 cup unsalted peanuts
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda

Instructions

  • In a microwave-safe bowl, combine the sugar and corn syrup.
  • Microwave on high for 5 minutes.
  • Stir in the peanuts and microwave for an additional 3 1/2 minutes.
  • Stir in the butter and vanilla extract, then microwave for another 1 1/2 minutes.
  • Add the baking soda and stir quickly until the mixture becomes light and foamy.
  • Pour the mixture onto a greased baking sheet and spread it out evenly. Let it cool completely.
  • Once cooled, break the brittle into pieces and enjoy!

Notes

  • Be cautious when stirring the mixture after adding the baking soda, as it can foam up quickly.
  • You can substitute other nuts (like almonds or cashews) for peanuts if you prefer.
  • Store the peanut brittle in an airtight container at room temperature for up to 2 weeks.
  • Make sure the bowl you use is large enough to allow for the foaming action of the baking soda.
