Description

Pecan Cookie Balls are melt-in-your-mouth treats that combine the rich flavor of toasted pecans with a buttery, sweet cookie dough. These bite-sized delights are rolled in powdered sugar, creating a soft, crumbly texture that’s absolutely irresistible. Perfect for holiday gatherings, parties, or as an everyday sweet snack, these cookies are simple to make and loved by everyone!

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar (plus extra for rolling)
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup finely chopped pecans, toasted
  • 1/4 teaspoon salt

Instructions

  • Preheat the oven and prepare the pecans:
Preheat your oven to 350°F (175°C). Spread the chopped pecans on a baking sheet in a single layer and toast them in the oven for about 5-7 minutes, until they’re fragrant and lightly golden. Set them aside to cool.
  • Make the dough:
In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy (about 2-3 minutes). Add the vanilla extract and mix until combined. Gradually stir in the flour, salt, and toasted pecans. Mix until a dough forms.
  • Shape the cookies:
Scoop small amounts of dough (about 1 tablespoon per ball) and roll them into small balls. Place the balls onto a parchment-lined baking sheet, spacing them about 1 inch apart.
  • Bake the cookies:
Bake the pecan cookie balls in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Be careful not to over-bake, as they will continue to firm up as they cool.
  • Cool and roll in powdered sugar:
Allow the cookies to cool for about 5 minutes on the baking sheet before transferring them to a wire rack to cool completely. Once they’re cool, roll them in powdered sugar to coat. For extra sweetness, you can roll them in powdered sugar a second time for an added layer.
  • Serve:
Serve these delicious pecan cookie balls as a sweet snack, dessert, or at any special occasion. Enjoy!

Notes

  • These cookies store well in an airtight container for up to a week. They also freeze beautifully if you want to make them ahead of time.
  • You can use other nuts, such as walnuts or almonds, if you prefer a different flavor.
  • For a festive touch, you can sprinkle a pinch of cinnamon into the dough or on top of the powdered sugar for added warmth and flavor.
