- 12 oz white chocolate chips or chopped white chocolate
- 1/2 cup dried cranberries, roughly chopped
- 1/4 cup unsalted pistachios, chopped (optional)
- 1/4 cup mini marshmallows (optional for extra texture)
- 1 tsp vanilla extract
- 1/4 tsp sea salt
- Red and pink sprinkles (for garnish, optional)
Instructions
- Prepare a baking sheet by lining it with parchment paper or a silicone baking mat.
- Melt the white chocolate: In a heatproof bowl, melt the white chocolate chips or chopped white chocolate in the microwave in 30-second intervals, stirring in between until smooth and fully melted. Alternatively, you can melt the chocolate over a double boiler.
- Add flavor: Stir in the vanilla extract and a pinch of sea salt to the melted white chocolate. This will enhance the flavor of the chocolate and give it a little balance.
- Mix in cranberries and other additions: Gently fold in the dried cranberries, chopped pistachios (if using), and mini marshmallows (if using) into the melted white chocolate mixture.
- Shape the bites: Drop spoonfuls of the white chocolate mixture onto the prepared baking sheet. If you want to make them heart-shaped, you can use a silicone heart-shaped mold or simply shape them by hand.
- Chill: Refrigerate the white chocolate cranberry bites for about 30 minutes to 1 hour, or until they are fully set.
- Garnish: Once set, you can garnish the bites with red and pink sprinkles to give them a festive touch.
