- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can artichoke hearts, drained and chopped
- 4 cups vegetable broth
- 1 cup heavy cream
- 4 cups fresh spinach
- Salt and pepper to taste
- Grated Parmesan cheese for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until onions are translucent.
- Stir in artichoke hearts and cook for 2 minutes.
- Pour in vegetable broth and bring to a simmer.
- Add in heavy cream and spinach, cook until spinach wilts.
- Season with salt and pepper.
- Serve hot, garnished with grated Parmesan cheese.
