For the Topping:

  • 1 baguette, sliced into 1-inch thick slices
  • 2 cups shredded Gruyère cheese (or Swiss cheese)
  • 1/2 cup Parmesan cheese (optional, for extra flavor)

Instructions

  • Caramelize the Onions:
    In a large pot or Dutch oven, heat the butter and olive oil over medium-low heat. Add the sliced onions and cook, stirring occasionally, for 30-40 minutes, until the onions are very soft and golden brown. Be patient, as this step is crucial to developing the soup’s depth of flavor. You can sprinkle the onions with sugar during the cooking process to help with caramelization.
  • Add the Broth and Seasonings:
    Once the onions are caramelized, add the white wine (if using) and cook for an additional 2-3 minutes, scraping up any browned bits from the bottom of the pot. Add the beef broth, thyme, bay leaf, Worcestershire sauce (if using), and season with salt and pepper. Bring to a simmer, then reduce the heat and let it simmer gently for 20-30 minutes. Adjust seasoning to taste.
  • Prepare the Bread:
