  • 3 garlic cloves, minced
  • 8 cups chicken broth (low-sodium preferred)

  • 1 teaspoon dried parsley
  • 1 bay leaf
  • 2 cups cooked chicken, shredded (preferably rotisserie or leftover)
  • 1 1/2 cups egg noodles (or any noodles of your choice)
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  • In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes, until the vegetables are tender.
  • Add the minced garlic and cook for another 1 minute until fragrant.
  • Pour in the chicken broth, dried thyme, dried parsley, and bay leaf. Stir to combine.
  • Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook for about 10 minutes, allowing the flavors to meld.
  • Add the shredded chicken and egg noodles to the soup. Stir well and cook for an additional 8-10 minutes, or until the noodles are tender.
  • Season with salt and pepper to taste. Discard the bay leaf before serving.
  • Garnish with fresh parsley if desired. Serve hot and enjoy!
