- 1 bay leaf

Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes, until the vegetables are tender.
- Add the minced garlic and cook for another 1 minute until fragrant.
- Pour in the chicken broth, dried thyme, dried parsley, and bay leaf. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook for about 10 minutes, allowing the flavors to meld.
- Add the shredded chicken and egg noodles to the soup. Stir well and cook for an additional 8-10 minutes, or until the noodles are tender.
- Season with salt and pepper to taste. Discard the bay leaf before serving.
