Ingredients

  • 2 tbsp olive oil
  • 2 large onions, sliced
  • 2 cloves garlic, minced
  • 1 lb mushrooms, sliced
  • 4 cups vegetable broth
  • Salt and pepper, to taste
  • 4 slices of bread
  • 1 cup shredded cheese (such as Gruyere or cheddar)

Instructions

  • In a large pot, heat the olive oil over medium heat.
  • Add the sliced onions and cook until caramelized, about 20 minutes, stirring occasionally to prevent burning.
  • Add the minced garlic and sliced mushrooms to the pot. Cook until the mushrooms are tender and have released their moisture, about 8-10 minutes.
  • Pour in the vegetable broth and bring the mixture to a simmer. Cook for an additional 10 minutes, allowing the flavors to meld.
  • Season with salt and pepper to taste.
  • While the soup is simmering, preheat the oven or a skillet to toast the bread.
  • Place the bread slices on a baking sheet, sprinkle with shredded cheese, and broil or toast until the cheese is melted and bubbly.
  • Serve the soup hot, topped with the cheesy toasties.
