- 2 large onions, sliced

- 4 slices of bread
- 1 cup shredded cheese (such as Gruyere or cheddar)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the sliced onions and cook until caramelized, about 20 minutes, stirring occasionally to prevent burning.
- Add the minced garlic and sliced mushrooms to the pot. Cook until the mushrooms are tender and have released their moisture, about 8-10 minutes.
- Pour in the vegetable broth and bring the mixture to a simmer. Cook for an additional 10 minutes, allowing the flavors to meld.
- Season with salt and pepper to taste.
- While the soup is simmering, preheat the oven or a skillet to toast the bread.
- Place the bread slices on a baking sheet, sprinkle with shredded cheese, and broil or toast until the cheese is melted and bubbly.
- Serve the soup hot, topped with the cheesy toasties.
