- 1 lb boneless, skinless chicken breasts (or thighs), cubed
- 1 tbsp olive oil (or coconut oil)
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1-inch piece fresh ginger, minced
- 1 can (14 oz) coconut milk (full-fat)
- 4 cups chicken broth (low-sodium)
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/2 tsp ground cinnamon
- 1/4 tsp ground black pepper
- 1/2 tsp salt (adjust to taste)
- 1 tbsp lime juice
- 1 cup fresh cilantro, chopped
- Optional garnish: extra cilantro, lime wedges, and shredded chicken
Instructions
- Heat the oil in a large pot over medium heat. Add the chopped onion and sauté until softened, about 3-4 minutes.
- Add the minced garlic and ginger to the pot and cook for another minute, stirring frequently to prevent burning.
- Stir in the ground cumin, ground coriander, ground turmeric, ground cinnamon, black pepper, and salt. Cook for about 1 minute until the spices become fragrant.
- Add the cubed chicken to the pot and cook until browned on all sides, about 5-7 minutes.
- Pour in the chicken broth and bring the soup to a simmer. Add the carrots and celery and cook for 10-12 minutes, or until the vegetables are tender.
- Add the coconut milk and bring back to a simmer. Let it cook for another 5-7 minutes, stirring occasionally, until the soup is hot and well-combined.
- Stir in the lime juice and chopped cilantro. Taste and adjust seasoning if necessary.
- Serve hot, garnished with additional cilantro and lime wedges. For extra protein, you can add shredded chicken to the soup.
Notes
- If you prefer a thicker soup, you can reduce the chicken broth or blend part of the soup and return it to the pot.
- For extra flavor, you can add a diced jalapeño or red chili flakes to give the soup a spicy kick.
- You can use bone-in chicken if you prefer a richer broth and shredded chicken in the soup.
