- 4 cups thinly sliced potatoes
- 3 tablespoons butter
- 3 tablespoons flour
- 1 1/2 cups milk
- 1 teaspoon salt
- 1 dash cayenne pepper
- 1 cup grated sharp cheddar cheese
- 1/2 cup grated cheese (for topping)
Instructions
- In a small saucepan, melt butter and blend in flour.
- Let the mixture sit for about 1 minute.
- Gradually add all of the cold milk, stirring with a whisk to prevent lumps.
- Season with salt and a dash of cayenne pepper.
- Cook the sauce on low heat until it becomes smooth and starts boiling, stirring occasionally.
- Once the sauce is boiling, reduce heat and stir in the grated sharp cheddar cheese until it melts and becomes smooth.
- In a lightly greased 1-quart casserole dish, place half of the sliced potatoes.
- Pour half of the cheese sauce over the potatoes.
- Repeat with the remaining potatoes and cheese sauce, then sprinkle the top with the remaining grated cheese.
- Bake in a preheated 375°F oven for 30-40 minutes, or until potatoes are tender and the top is golden and bubbly.
Notes
- For extra flavor, you can add a layer of cooked bacon or sautéed onions between the layers of potatoes.
- If you prefer a thicker sauce, reduce the amount of milk slightly or cook the sauce a little longer.
- These potatoes can be made ahead and stored in the refrigerator for up to 2 days before baking.
