Description

These Cheesy Scalloped Potatoes are creamy, cheesy, and the perfect comfort food. Layers of thinly sliced potatoes baked in a rich cheese sauce, topped with extra melted cheese for an irresistible dish that’s perfect for any occasion.


Ingredients

  • 4 cups thinly sliced potatoes
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 1/2 cups milk
  • 1 teaspoon salt
  • 1 dash cayenne pepper
  • 1 cup grated sharp cheddar cheese
  • 1/2 cup grated cheese (for topping)

Instructions

  • In a small saucepan, melt butter and blend in flour.
  • Let the mixture sit for about 1 minute.
  • Gradually add all of the cold milk, stirring with a whisk to prevent lumps.
  • Season with salt and a dash of cayenne pepper.
  • Cook the sauce on low heat until it becomes smooth and starts boiling, stirring occasionally.
  • Once the sauce is boiling, reduce heat and stir in the grated sharp cheddar cheese until it melts and becomes smooth.
  • In a lightly greased 1-quart casserole dish, place half of the sliced potatoes.
  • Pour half of the cheese sauce over the potatoes.
  • Repeat with the remaining potatoes and cheese sauce, then sprinkle the top with the remaining grated cheese.
  • Bake in a preheated 375°F oven for 30-40 minutes, or until potatoes are tender and the top is golden and bubbly.

Notes

  • For extra flavor, you can add a layer of cooked bacon or sautéed onions between the layers of potatoes.
  • If you prefer a thicker sauce, reduce the amount of milk slightly or cook the sauce a little longer.
  • These potatoes can be made ahead and stored in the refrigerator for up to 2 days before baking.
