Description

This Creamy Vinaigrette is a rich and tangy dressing with a smooth texture. Made with a base of olive oil, Dijon mustard, and a touch of mayonnaise or Greek yogurt, this creamy dressing is perfect for salads, roasted veggies, or as a dip. It’s quick to prepare and adds a velvety finish to any dish!


Ingredients

  • 2 tablespoons Dijon mustard
  • 2 tablespoons red wine vinegar (or lemon juice for a citrus twist)
  • 1 teaspoon honey or maple syrup (optional for sweetness)
  • 1/4 cup olive oil
  • 1/4 cup mayonnaise or Greek yogurt (for a creamier texture)
  • Salt and pepper, to taste
  • 1 small garlic clove, minced (optional)

 

  • 1 teaspoon fresh or dried herbs (like parsley, thyme, or oregano, optional)

Instructions

  • Combine the Ingredients: In a small bowl, whisk together the Dijon mustard, vinegar, and honey (if using).
  • Add the Mayonnaise or Yogurt: Stir in the mayonnaise or Greek yogurt for a creamy texture.
  • Slowly Add Olive Oil: Gradually add the olive oil while whisking constantly to emulsify the dressing and create a smooth texture.
  • Season: Add salt and pepper to taste, and mix in minced garlic and herbs if desired.

 

  • Serve or Store: Serve immediately over your salad, or store in an airtight container in the fridge for up to 1 week. Shake or stir before using as the oil may separate over time.

Notes

  • For a vegan version, use vegan mayonnaise or Greek-style yogurt.
  • If you like a tangier dressing, add more vinegar or lemon juice.
