Ingredients
Scale
- 2 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 tablespoon ground ginger
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, room temperature
- 1/2 cup packed light-brown sugar
- 2 large eggs
- 1 cup unsulfured molasses
- 1/2 cup hot water
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 10-12 inch wreath-shaped bundt pan or a round cake pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, ginger, cinnamon, cloves, nutmeg, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter and light-brown sugar until light and fluffy.
- Beat in the eggs, one at a time, ensuring each is fully incorporated.
- Stir in the molasses, mixing until smooth.
- Gradually add the dry flour mixture to the wet ingredients, alternating with hot water, starting and ending with the dry ingredients. Mix until just combined.
- Pour the batter into the prepared pan, smoothing the top with a spatula.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Optional: Once cooled, dust with powdered sugar or drizzle with a simple glaze for extra decoration. You can also garnish with candied ginger or whipped cream for a festive touch.
Notes
- The hot water helps to make the cake moist and gives it a soft crumb texture.
- You can decorate the cake with frosting or a dusting of powdered sugar to make it look more festive.
- If you want a more intense ginger flavor, you can add an additional teaspoon of ground ginger.
